Quality, storage and cooking

How should I store it?

In a cool, dark cupboard away from the stove, sealed between uses. Light, heat and oxygen are what degrade olive oil — not time on its own.

How long does it last once opened?

About three months for best flavour. It does not become unsafe after that; it just gets flatter as the polyphenols and aromatics fade.

Why does harvest date matter more than best-before?

A best-before date tells you when the producer stopped guaranteeing the oil. A harvest date tells you how old it actually is. Oil declines from the day it is pressed.

Can I cook with extra virgin olive oil?

Yes — sautéing, roasting and shallow frying are all well within its range. Its smoke point of roughly 190 to 210°C sits above what most home cooking reaches.

Does heating it destroy the health benefits?

Some polyphenols and aromatics are reduced, but the monounsaturated fats are largely unaffected at normal cooking temperatures.

Why is your oil bitter and peppery?

Those are the polyphenols, and they are the point. Bitterness and a peppery catch indicate a fresh, mechanically extracted oil.

Is your oil high in polyphenols?

Our current batch tests at 16.96 mg CAE per 100ml, roughly 185 mg/kg. That is a respectable mid-range figure and not a high-polyphenol oil.

Is it filtered?

Lightly, so it stays clear and stable in the tin. Unfiltered oil looks appealing but the sediment shortens its life.

Where exactly does it come from?

One family grove in the hills near Izmir, in the Aegean region of Türkiye, farmed by the family. Nothing is blended in from anywhere else.

Why a tin instead of a bottle?

A tin blocks light completely. Tins also stack tidily and do not break.

Ordering

When will my order be dispatched?

Orders are dispatched within one to two business days of ordering.

Do you ship across Australia?

Yes, Australia-wide. We also sell in person at Melbourne markets and deliver locally around Melbourne ourselves.

What sizes do you sell?

A 1L tin at $34 and a 500ml bottle at $24. The tin is better value per litre; the bottle suits finishing, dressings, or a first taste.

Can I buy wholesale for my café or restaurant?

Yes. Minimum is one case, trade pricing is on application, and you deal with the family rather than a sales rep.

Do you do gift sets?

Yes — boxed with a handwritten harvest card carrying the pressing date, and no prices on the packing slip.
