Most olive oil tells you a country and a best-before date. We publish the pick window, the variety, the extraction and the lab figures for each batch — including the ones that are only average.

If a number here is worse than last season, it will still be here. That is the entire value of keeping a log rather than a brochure.

What we did, and what we would change

Went well

Hand-picked, milled the same day

Olives begin to ferment the moment they leave the tree, so fruit went to the mill the day it was picked and was cold-extracted within 24 hours. This is the part of the process we would not change.

Polyphenols came in mid-range

Batch 001 tested at 16.96 mg CAE per 100ml — roughly 185 mg/kg. That is respectable but it is not a high-polyphenol oil. Next season we are trading some yield for a higher number.

Went well

Tins rather than clear glass

The 1L format is fully light-proof, ships without breakage, and matches how much oil a household that cooks gets through in six to eight weeks.

We did not lab-test early enough

We tested the finished oil rather than sampling through the pick. Next season we will test at intervals and publish the curve.

Batch 002 — the plan

We are picking a portion of the grove earlier and greener next season, specifically to raise the polyphenol figure. Green fruit carries far more phenolic content than ripe fruit, and the cost is yield — considerably less oil per tonne.

The result will be published here whichever way it goes. If picking early does not move the number as much as we expect, that will be on this page too.
